I’ve found one of the easiest ways to please everyone is to do a build your own type meal.
As it’s Saturday night, I wanted to do a relaxed help yourself tea so that there was something for everyone.
With this in mind, we had fajitas with bowls of different fillings, so that if there was something that you didn’t like, you could just leave it out.
So the teen who doesn’t like peppers doesn’t have to have them, for example and can pick and choose the stuff he does.
For this easy meal, heat a pan with a tiny bit of oil (although oil not necessary) and warm your tortillas for approx 5 – 10 seconds on both sides.
Have bowls of whatever fillings you like – we went for
- salsa
- shredded lettuce
- grated cheese
- vegan meat strips (declared by the youngest after a sniff at one and decided to try – “these are nice actually!”) Actually gobsmacked, result! Would he have if it wasn’t pick and choose?! Huzzah!
- rice
- red peppers
- beans
For the beans, use a tin of any beans really such as pinto or black beans, and heat them as per instructions.
Mash when cooked and you can add a little lemon or lime juice for extra flavour like I did.
Grab a tortilla and get filling!
